Very careful about Nature, Jacques is a wine-grower attentive to his land and his vines. On his plots located in Chavot-Courcourt, Meunier grape-variety can develop next to Chardonnay. These grape-varieties are complex to work, requiring lots of care hours to get clean and healthy vines, just like the grape wished.
Jacques practices an integrated wine-growing process, taught by Jean-Marie, his father. His vines are cultivated like a garden and the earth must be living there. So, he performs ploughing operations and brings some barks to feed it with organic matter. He oversees the traditional sorting at harvest time, as from the manual picking by his team of harvesters, taking care of them too. This careful work carried out in the vines is found again in the winery, where he enjoys producing new champagnes every year.
